Advantages of croissant dough machines

Croissant maker ROLL 26 + FL is an evolved version of the basic design of the ROLL 26 croissant machine. With the additional extension table, the user gains greater flexibility and the ability to produce a variety of products, while maintaining high precision and repeatability of the process.

Construction and design of the machine

The design of the ROLL 26 + FL remains similar in essence to the basic version of the ROLL 26. The key modification that extends the functionality of the machine is additional folding extension tablemounted to the existing drive by means of a chain transmission.

The extension table consists of:

  • a conveyor belt of adjustable length,

  • pressure table with lifting and pressure adjustment,

  • height-adjustable screw-on legs.

Other components of the machine, including drives and rollers, remain unchanged. Please note, however, that with this version feeding the finished product backwards towards the operator is not possible.

Operating principle

Despite the additional functions, the principle of the machine remains unchanged:

  1. Serving the cake: The dough, properly prepared and evenly divided, is placed on the feeder, maintaining the spacing and appropriate pace.

    • NOTE: for long moulds, such as hatchings for challah, the billets must be placed centrally on the infeed conveyor.

  2. Forming the cake: A piece of dough is moved between hardened rollers that form an elliptical pancake.

  3. Wrapping up: The pancake is sandwiched between two mating belts, where it is rolled according to the parameters set by the operator.

  4. Further process: The prepared product goes to the front conveyor belt, from where the operator decides on further processing:

    • leaves the pressure table raised, preserving the structure of the product,

    • by pressing the table against the conveyor belt, the product is extended, increasing its size and form.

After completion of the work, the operator shall cleaning the machine, removing small pieces of dough and sweeping it off the flour.
