Pizza oven - how does it work?

The operating principle is simple and has remained virtually unchanged for years. Only new technologies are emerging. The pizza is baked in a chamber with a fire inside (or there are heaters, as is the case with electric ovens). This is what differentiates a pizza oven from the one used to make bread. The whole trick is to place the pizza in the baking chamber in such a way that the flame does not come into contact with the dough. This would result in rapid burning. So a small flame near the back wall or in another non-contact area of the chamber is sufficient.

Pizza ovens - types

The traditional stone pizza oven has always been wood-fired. Over time, however, oven manufacturers have begun to modernise the appliances and introduce other technologies. The result is a diversity that offers great possibilities when it comes to the right choice of appliance for personal preferences and the possibilities and needs of the establishment.

Gas pizza oven

The gas pizza oven is an appliance that, depending on the model, can run on natural gas or LPG. The operating temperature is 400°C and is achieved by independent burners located at the bottom and top of the chamber. The gas pizza oven is equipped with magnetic safety valves and electronic ignition of the burners. A digital temperature measurement display allows continuous monitoring of the temperature value, and constant flame control is a guarantee of even heat distribution in the baking chamber.

The gas pizza oven has a modular design, which makes it easy to place the appliance or set of appliances even in very confined spaces. The baking base is made of fire-resistant stone material.

Electric pizza oven

Each electric pizza oven streamlines the entire process by reducing the baking time. Programming possibilities and the LCD touch screen make it significantly easier to operate such an oven and the operating temperature ranging from 150 to 300°C in connection with even heat distribution in the cooking chamber allow the preparation of pizza, bread and other baked products. A full baking cycle takes between 1 and 30 minutes. The electric pizza ovens are thus very efficient and the mobile base makes them easy to move around when required. The entire oven is made with attention to detail and the high-quality stainless steel, impresses with its durability and aesthetics.

Stone oven for pizzas

A professional pizza oven of this type offers the option of firing with natural gas or wood. The interior of the baking chamber is made of heat-resistant materials, which, combined with excellent insulation and a stainless steel housing, provides sufficient protection against overheating. The oven's operating temperature of 400°C can be continuously adjusted and a thermostat ensures that the maximum temperature is not exceeded. Thanks to the touchscreen display, control of the oven's operating parameters is very simple.

When planning the purchase of an appliance such as a pizza oven, it is important to consider several important factors that may either favour or disqualify a particular model. These are:

Pizza ovens - cleaning and maintenance

A pizza oven, like any other appliance, requires a cycle of maintenance to ensure long life and trouble-free operation. All pizzas baked should be of a similar high quality. For this reason, regular cleaning should be carried out (preferably at the end of each working day).

To clean a traditional oven, a special wire brush is used to effortlessly deal with the remains of burnt dough. This method of removing dirt is recommended by the Italian masters.

As far as gas and electric pizza ovens are concerned, only professional detergents dedicated to catering should be used to clean and maintain them. This will guarantee that these products are safe, as they are approved for food contact.

One more interesting method of dirt removal is worth noting. We are, of course, talking about the built-in pyrolysis mode. Appliances equipped with this function practically clean themselves.
