AGIV FORNI baking ovens, are appliances for demanding customers who place particular emphasis on the quality of baked goods and their traditional appearance. These appliances, which have proven themselves on the European market, have been successfully installed in our country for almost 30 years.
How do our ovens work?
The principle of the Agiv Forni cooker has remained the same for years. The 5.5mm-thick tubes are flooded with water, which is then heated at the top of the flues to steam temperature. The steam then circulates through the entire volume of the pipe, giving up its temperature to the herts and steam generators arranged on the pipes. This is how the hertz, on which the baking takes place, and the steam generators, which supply the steam produced at baking temperature, are heated.

What are the advantages of the Agiv Forni ceramic-tube cooker?
The unquestionable advantage of our cooker is:
- perfectly even baking for all types of bread;
- invisible heat loss of the baked product after loading (high thermal inertia, for example a 22m bakery oven weighs 12.5t)

AGIV FORNI cooker design
As far as the construction of the cooker is concerned, it can be divided into two parts:
- The first part, is the pedestal at the bottom of the cooker. It is constructed using original Italian ceramic, ensuring the highest level of heat accumulation.
- The second element is the baking chambers in which the hertz are located. There are open steam generators on each side of the chamber, from which steam escapes over a length of 2 to 3 metres, depending on the oven model. The steam generators are located on both sides. Other tubular ovens for supplying steam to each level of the oven, have a square cut out at the back of the chamber with a side of a few centimetres, the large amount of steam supplied to the baking chamber through one small opening undoubtedly has an impact on the quality of the baked bread.

How does the bread making process work with the Agiv Forni oven?
It is important to remember that the vast majority of cookers weigh several tonnes. This has its advantages, but also its disadvantages.
An unquestionable advantage is the low loss of heat provided by the burner, or the high heat accumulation capacity of the ceramics of which the smoke ducts and other components are made . When baking bread on the herty, each user becomes aware of this very quickly, observing an almost imperceptible drop in temperature. The steaming of the steam produced at the baking temperature, which we have already mentioned, is also an unquestionable advantage influencing the quality and appearance of the bread (in other tube ovens the steam is produced at a temperature 2 or 3 times higher).
As far as the inconvenience of operating an Agiv Forni tube furnace is concerned, it is undoubtedly the high thermal inertia consisting of the ability to store a large amount of thermal energy.
In practice, this means that it is difficult to cool the oven down to a lower temperature in a short period of time. This may result in the need for a longer pause to reach a lower temperature (e.g. confectioners often bake after the bakers have finished their work from baking at the highest temperature; of course, all their many hours of work are done with the burner turned off).

Unfortunately, it is the case in practice that small companies most often use subcontractors who are not involved with the company on a day-to-day basis and do not have the necessary experience and training in cooker construction. One must always be aware that mistakes made during the construction of the cooker are impossible to eliminate later.

After this time, the oven is put into production in stages, which at the earliest can take place one week after the start of work. Uniform heating of ceramic tubes

Ceramic tubes flooded with water form a system in which the heat from the burner transforms the water into steam, circulating throughout the system.
