The wheat machine is a device which facilitates preparation of wheat dough using an indirect, two-phase method. The fermentation process of a portion of flour is carried out inside the wheat machine, i.e. the so-called pre-ferment is created.
The equipment used to prepare pre-ferment is controlled by a terminal with a microprocessor. A driver is responsible for temperature stabilisation during the phase of maturing and storing as well as controls the fermentation process time. Cooling and temperature stabilisation systems make it possible to store preferments for up to 72 hours without the risk of quality deteriorations. Properly cooled pre-ferments are later added to dough in order to increase its properties, thus the quality of final products is much higher.
A mixer equipped with a drive is a very important working element of the device. Its shape and proper selection of rotations allow users to combine water and flour into a homogenous suspensions during mixing. The mixer provides intensive heat exchange during the phase of fermentation ensuring identical temperature in the entire mass. Mixer’s work does not result in washing away and destroying gluten or flour particles settling on the bottom of the container.
